It’s hard to believe I’ve spent so much time up here and never knew this place existed. On the back of a Friday photo mission, I was aimlessly driving around Edson Hill and stumbled onto the Edson Hill Inn property. I poked around a bit, sticking my head into the reception area, and knew this was a place Abbie and I had to visit for a bite. Sitting in the car in the parking lot, I made the reservation, and the date was set.
After nearly three straight days of rain in Vermont, Abbie and I were itching to get out of the house, and our reservation at Edson Hill was just the ticket. As we got into the car to head over, the temps dropped, the snow started to fall, and winter returned to Stowe.
Edson Hill is a charming boutique inn set on 38 acres of Vermont countryside, blending classic New England style with a cozy, upscale feel. Originally a private estate built in the 1940s, it transitioned into an inn a decade later and has since become a beloved retreat for visitors looking to experience the beauty of Stowe.
We walked into the reception area to a warm greeting, with the staff taking care of our jackets and leading us into their inviting family room. After quickly warming up by the fireplace, we were led downstairs, past the formal dining room, and into the tavern. The space felt incredibly cozy and speakeasy-esque. We lucked out and were given an awesome couch table in the middle of the space, right in front of the fireplace—perfect for a romantic dinner. We would highly recommend asking for this table for a group of 2-4.
We started with drinks—Tom Cat Negroni for me and a Spicy Maple Margarita for Abbie. The waitstaff was fantastic, super attentive to my allergies, and really made the experience that much better.
Their menu, while small and focused, felt like it had something for everyone. We started with their maple brussel sprouts, a favorite of ours, and they did not disappoint.
For dinner, I went with their ribeye, and Abbie chose the scallops. They went out of their way to accommodate my anaphylactic food allergies, making me feel comfortable and at ease the entire time we were there—major bonus points for that.
Dinner arrived, and we dug in. This ribeye was genuinely a top 10 steak of my life. Cooked to the perfect medium-rare, the meat just fell apart with every bite. It had so much flavor—right up my alley. Abbie had a similarly positive experience with her scallops, diving in and loving every bite.
After such an incredible meal, Abbie couldn’t help but check out their chocolate torte, which continued the trend of amazing bites.
We wrapped up dinner already planning our next visit. We really loved every minute.
We couldn’t recommend Edson Hill for dinner more. It’s the perfect special occasion spot, especially on a snowy winter evening. If you’re looking for your next romantic evening out in Stowe, look no further than Edson Hill.
